Lechon San Diego is one of the most scrumptious and delectable Filipino delicacy. It is a culinary masterpiece that has been a part of the Filipino history and dates back to the Spanish era from which it gets its Spanish name which means suckling pig. It is called a suckling pig because the piglet is still young when its slaughtered. This pork dish is quite popular in Spanish speaking countries which are Spain and former colonies.

The piglet is first slaughtered and then disemboweled. From there its skewed with a spit and slowly turn making sure all the meat is properly roasted which is a style that bears much resemblance to a rotisserie. The process is repeated for several hours until the meat is tender and the skin crunchy and crisp.

The roasting takes place over a wood or charcoal fire where the piglet is drenched in oil. The people from the provinces use banana leaves and a long wooden stick to make this brush. The purpose of using oil is to make the skin crisp and crunchy. Its not cheap to prepare this dish therefore its only prepared during special occasions such as festivals, Christmas, birthdays and graduations. This meal is normally a highlight of an event where the piglet is brought out with its mouth stuffed with an apple.

Its such a popular dish that there is a specific occasion in Balayan Batangas when a Lechon feast is prepared. Each one of the dish presented comes with its own theme with some dressed as ballerinas. The fact that leftovers from this dish can be used to make other delicious meals makes it even more popular. The leftovers are normally boiled in vinegar as a way of making the meat moist and the skin soft.

Here you will find many restaurants that sell this delicacy all round the year. The same dish is also quite popular in Cuba where its served with black beans and rice. There are other countries as well where this dish is enjoyed considerably and they include the Dominican Republic, Costa Rica, Puerto Rico and Colombia.

As the world becomes a global village from the growing technology, this cuisine has found its way far and beyond the few places mentioned and has a great following. To maintain its sense of fascination to the great numbers of travelers the dish is made in different ways. This makes it a dish that towers above the rest. Some people are hesitant when it comes to trying out new dishes but other are quite okay with trying them out.

Not all dishes might be appealing but its good to try new ones when the chance presents itself. To maintain a healthy body, keep eating traditional dishes.
