By Deborah Myers

Lentils make an almost complete nutritional part of the diet. It is very high in all the B vitamins, as well as many essential minerals such as iron and others. It is thought by nutritionists to be the almost perfect food, due to its nutritional content as well as its very lost cost for those on a budget. Lentils can be used in lots of dishes, but an easy lentil soup is one of the best, tastiest, and easiest.

A family of six to eight can be served for under ten dollars if care is taken in selecting ingredients to go with the lentil. All the family can enjoy this meal by choosing ingredients that is agreeable to all the family members. With the range of ingredients that blend well with them, it is easy to pick everyone's favorite.

The types of soups that can be made with lentils are numerous. You can make it spicy, cool and creamy, smooth and creamy, full of chunks of vegetables, and clear if that is your wish. With such a variety of types, there should be something to please every taste.

Lentils, however, are not just for soup. There are a number of more substantial dishes you can prepare with them. Being full of fiber, protein, and other valuable nutrients, it is easy to use them as a substitute for meats in many dishes. They are a delicious and inexpensive protein for those on a limited budget.

Lentil bowls are a great way to please everyone's taste, with just the ingredients they want. Combine the lentils with any vegetable you wish, toss in a good serving, and pour over whatever dressing you want. Each family member can choose their own dressing. You can make an ethnic dish by the choice of dressing. An egg, goat cheese and potatoes make it more like the traditional breakfast bowls. If you want to go vegan, leave off the egg and cheese.

If Mexican is your choice, roast some cauliflower and add it with the lentils to flour tortillas, adding whatever ingredients you usually do, such as cheeses, olives, etc. Add a creamy chipotle sauce, made with Greek yogurt for extra health and nutrition, or other toppings such as a creamy avocado sauce for less heat but the same creaminess.

A very beautiful, healthy salad that also tastes superb is made with fried Halloumi and a variety of greens. To add extra greens, put it on a bed of spinach or arugula. Halloumi is a briny cheese made from a white cheese that is a mixture goat and sheep milk, or even with cow's milk added sometimes. It is available in most local markets. Top it with thinly sliced zucchini, grilled or roasted heirloom tomatoes, and a sprinkling of micro-greens for a beautiful and very healthy dish.

Shepherds pie is always a hearty favorite, and even if you are vegan, you can enjoy it with lentils. Stir fry some mushrooms with spicy lentils, add vegetables of your choice, and you have a hearty filing. Top it with mashed sweet potatoes and add a crumb topping. Add spices to your taste. With a little creativity, you can come up with many dishes. You can experiment and discard any you don't like, as lentils are so cheap.
